Wake Up and Smell the Sunshine Breakfast Bowl

Hello! I am finally posting again after a very busy few weeks of moving to my new place (pictures coming soon), being sick, and getting started in school!

One of my absolute favourite parts of the day is breakfast. There is something so peaceful and wonderful about waking up, putting on some cosy slippers and a super soft warm robe and heading to the kitchen to eat a delicious and filling healthy meal.  Here is another breakfast recipe that I would personally describe as life changing-ly tasty:

Wake Up and Smell the Sunshine Breakfast Bowl Recipe
  • 1/4 cup oat bran or rolled oats (I like them raw but you can cook them if you'd prefer)
  • 1 tablespoon milled flaxseed (so good for you!)
  • 1/4 teaspoon ground cinnamon
  • 2 tablespoons pecans, crumbled and toasted
  • 1/2 large banana, sliced
  • 1/2 cup mixed berries, sliced (really you can use any fruit)
  • 1/2 cup almond milk
Combine all ingredients, stir, and you're golden! Serve with coffee and a glass of water and it's the perfect start to the day.

Rainy Wednesday Chocolate Banana Pudding

While going through the motions of my usual hour and a half commute home from my summer job yesterday, the coolest thing happened. I was standing on the sidewalk waiting to transfer busses. The sky was grey, but not overly threatening. Then, as I was looking off in the distance I could see what looked like a cloud of white smoke with a bus driving through it. As the bus got closer, I could see that it was soaking wet. I did a double take, and sure enough there was a wall of intense rain speeding towards me, even though where I was standing was dry. A few seconds later it was total downpour and everyone was running towards the bus shelter, where I took the above picture.I thought it was all quite exciting.

Then I got home and made pudding based off of THIS Eat Clean recipe, which is basically heaven in a bowl. It's super duper healthy, with a full serving of protein sneakily added in. Don't be afraid of the tofu! It still tastes good, I swear.

Recipe (Serves 4 - 6):

  • 1/4 almond/soy/skim milk
  • 3 tablespoons cocoa powder
  • 1 12.0 oz package of Silken soft tofu
  • 1/2 teaspoon vanilla extract
  • 2 medium bananas
  • Pinch of Sea Salt
  1. On Low-Medium heat in a saucepan, stir cocoa powder into almond milk.
  2. In a blender, combine all other ingredients.
  3. Add cocoa milk mixture to blender. Blend again, stopping to scrape down sides.
  4. Refridgerate for at least 30 minutes before eating.
Enjoy!

Pour Your Heart Out Protein Pancakes

Behold! One of my all time favourite healthy breakfast recipes, which I have hereby christened the 'Pour Your Heart Out Protein Pancake'. It is based off of this TIU version. Not only is it delicious, but it's also completely healthy and clean. As a vegetarian, I have to put a concious effort into adding protein to my diet, and this recipe does the trick. Even though this recipe has no added sugar, you'll be surprised at how sweet it tastes regardless!

Okay, so I'll admit I don't make them into little heart shaped pancakes every morning, but I'd like to think it tastes just a little bit better when I do. :)

Ingredients (Serves 1):

  •  1/4 cup liquid egg whites (approx. 2 egg whites)
  • 1/2 large banana (microwaved to make it easier to mash)
  • 1 teaspoon cinnamon
  • 1 tablespoon milled flaxseed
  • 1 scoop of any protein powder
  • Mixed Berries (or sliced fruit of your choice!)
  • cooking oil
Instructions :
  1. Heat a frying pan over medium-high heat on the stove top. Add cooking oil/spray.
  2. Mix dry ingredients in a small bowl (protein powder, flaxseed, cinnamon).
  3. Stir in wet ingredients (egg whites and softened banana)
  4. Pour into pan, cooking pancake on both sides until browned to your liking. If you want to make them into shapes, place your cookie cutter in the pan and pour batter into the mold.
  5. Place pancake onto a plate, and top with fruit. I like to then put it into the microwave for 45 seconds so that the berries are slightly melted, and the juices bleed into the pancake.
  6. Eat it while it's hot, and enjoy!
